Ciasu comes from Mió, a family-run farm in Monte Santo de Minas, located in Brazil’s renowned coffee-growing region of Minas Gerais. The farm spans a range of elevations and soil types, with each area carefully managed to support long-term sustainability. The focus is on restoring soil health, reducing chemical inputs, and providing stable year-round work for local families.
Many of the same workers return for each harvest, helping not only with picking but also with drying, sorting and preparing the coffee for export. This close-knit system means the coffee is grown, processed and prepared for export entirely on the farm, ensuring exceptional care at every stage.
This lot is a natural processed peaberry. Peaberries occur when only a single seed develops inside the coffee cherry, creating a small, rounded bean that roasts evenly and often produces a slightly more concentrated sweetness.
At Mió, natural processing is central to their microlot program. The cherries are carefully dried on raised beds and patios, before finishing in mechanical dryers to ensure consistency and clarity in the cup. The result is a coffee that balances vibrant fruit character with a clean, structured profile and excellent sweetness.
