This washed Starmaya comes from Mount Sunzu Coffee, a modern and innovative farm in northern Zambia, located at the base of the country’s highest mountain. The farm was founded by Swiss agronomists and entrepreneurs who want to show a new, sustainable way of growing coffee — focusing on both high quality and long-term environmental care. They currently grow coffee on 115 hectares, while also restoring 600 hectares of Miombo forest as part of their commitment to rebuilding the local ecosystem.

This lot was fully processed on-site at Mount Sunzu’s own wet and dry mill. After the cherries were carefully picked, they were floated to remove defects and then pulped. The coffee was fermented for 24 hours in 1000ml tanks without water, using only the natural yeasts and bacteria already present to build flavour and structure. It was then dried for ten days on raised beds, which were covered at night to keep conditions stable. After drying, the beans were hulled, graded and hand-sorted for quality.
