In the south of Huila, Timaná is home to generations of small coffee farmers who grow their crops among native trees that protect local wildlife and the environment. Working with Cata Export, these farmers blend traditional methods with modern training and quality support, helping them reach sustainable international markets.
This washed Castillo coffee shows that balance between heritage and precision. After being carefully hand-picked, the cherries are pulped and left to oxidise for 48 hours, which adds clarity and depth to the flavour. They’re then slowly dried on raised beds until they reach 11% moisture, giving the coffee structure and stability.
The final cup is clean and balanced, with flavours of light caramel, soft toffee, bright orange, and a hint of walnut — a perfect reflection of the care and dedication of the Timaná community.
